Cumin Cauliflower Soup with Crunchy Chickpeas Ingredients: 1 tablespoon olive oil1 onion (peeled and sliced)4 cups chicken stock (low fat, low sodium is best)2 cups cauliflower florets1 large baking potato (peeled and quartered)1 teaspoon Chuk De Jeera powder, 1/2 teaspoon garlic powder, 1 cup milk, Dash of salt and pepper to taste, 1 can (approx. 15 oz.) chickpeas (drained and rinsed), 1 tablespoon olive oil, 1/2 teaspoon cumin, 1/4 teaspoon garlic powder, Salt and pepper to taste Method: Take a large soup pot with peeled and sliced onions. Saute on medium heat until the onions begin to color.Increase the heat and add the chicken stock the quartered potato, cauliflower florets, and cumin. Bring to a boil.Using a blender, puree the soup.
